Dona Sofía is a molasses based rum that is distilled twice over three copper plates and spiced with all natural ingredients for 24 hours before filtering out all of the solids from the natural spice infusions. The entire process for every small batch of Doña Sofía spiced rum takes four weeks eventually leading to the 40% ABV bottle you have in front of you.
DONA SOFIA – TASTING NOTES
We all are familiar of the smells of the holiday season, with the cavalcade of aromas that invite you to eat and drink more and more and more. Doña Sofía gives you the chance to have Christmas any time of year because upon your first opening of the bottle, we ask you, no beg you, to put your nose to the bottle. We know it is impolitic now with the current climate to put your nose anywhere it does not belong, but trust us it is worth it because when you open the bottle, the smells of Christmas’ gone by in your parents’ kitchen will come rushing back to you. You first get the note of orange with the hint of vanilla and some other spice you may not be able to identify but you recognise it as a familiar one. When you take your first taste, you recognise the spice, cinnamon, with a hint of ginger. This combination along with the orange and vanilla make you want another sip immediately. It is so smooth to drink and yet warms you. If you wonder if we use a cask to develop the amber colour, we do not. The colour we come by naturally with an authentic vanilla bean pod.
