How to make raisin syrup:

– 2 parts sugar to 1 partwater, 50g of chopped raisin, dissolve over medium heat while stirring, bring to the boil, remove off the heat, cover and leave to infuse for an hour. Filter, bottle and keep in the fridge.

Method

Angostura Masterclass Featuring Tamboo Spiced Rum

We at The Craft Rum Club were super excited to be hosting a live tasting masterclass event this Summer in conjuction with the amazing rum brand Angostura featuring Tamboo spiced rum. The ticket information made its way out to our wonderful subscribers who had the chance to all meet in the real world to enjoy, sip and savour on a host of delish cocktails from the Angostura range. We were delighted to have access to the brands newcomer to their range. Tamboo spiced rum which is blended using tasty Caribbean spices.

“Angostura Tamboo is the perfect, playful partner to all of life’s Carnival moments and it likes to dress according”! (quote from Angostura) What better a venue to have this gathering at, than Limin in Southbank.

Tamboo spiced rum certainly has a wonderfully exotic bottle design and branding. At the event, we were joined by Angosturas brand ambassador who brought an array from the Angostura range for all to enjoy. The retail price of these can be pricy, so this was a unique opportunity for our Craft Rum Club members/non members to sample. Not to mention we were also joined online for those who could not make it to the venue via zoom, where everyone got.a chance to ask questions and interact with the event from the comfort of their home.

4 BEST SUMMER RUM COCKTAILS

Rum is quite possibly the most versatile spirit and used to create some of the most delicious cocktails favoured by many discerning drinkers around the world. Make the perfect Cuba Libre to sip on sunny evenings, wow your friends with a Mai Tai or enjoy a Hurricane with your friends and family. You can find a cocktail for every season, every occasion and everyone right here.

Daiquiri

If there is one cocktail that most bartenders acknowledge as the king of rum cocktails, it is the Daiquiri. The simple mix of rum, lime, and sugar is the trinity of ingredients that make up the foundation for many exotic drinks such as the Planters Punch, The Mai Tai and even the Mojito.

The drink was supposedly invented by an American mining engineer named Jennings Cox, who worked in a village called Daiquiri in Cuba at the time of the Spanish American War during the late 1890’s. Originally the drink was served in a tall glass packed with cracked ice. A teaspoon of sugar was poured over the ice and the juice of one or two limes was squeezed over the sugar. Two or three ounces of white rum completed the mixture. The glass was then frosted by stirring with a long-handled spoon. Later the Daiquiri evolved to be mixed in a shaker with the same ingredients but with shaved ice. After a thorough shaking, it was poured into a chilled coupe glass.

Consumption of the drink remained localised until 1909, when a Lucius W. Johnson, a U.S. Navy medical officer, tried Cox’s drink. Johnson subsequently introduced it to the Army and Navy Club in Washington, D.C., and drinkers of the Daiquiri increased over the space of a few decades. During the US prohibition, Americans flocked to Cuba to drink, and the Daiquiri became even more famous. It was one of the favourite drinks of writer Ernest Hemingway and U.S. President John F. Kennedy.

Today the Daiquiri comes in all shapes and sizes, from flavoured to frozen. From straight up, to on the rocks. And whichever way you choose, it should be cold, refreshing, light and easy to drink with a balance of sweet and sour.

Ingredients

50ml Equiano Light or white rum
25ml fresh lime juice
15ml Agave nectar/syrup

Method
Shake all of the ingredients with plenty of ice. Strain into a martini glass or champagne coupe. Garnish with the oils & twist of an orange peel.

Mai Tai

Probably the most well-known Tiki cocktail and favoured by both bartenders and cocktail enthusiasts alike.

Like many cocktail stories there is some controversy over the origins of the Mai Tai. Is the Q.B Punch from Donn Beach – Beachcomber Bar – the base for this cocktail or was

Victor Bergeron – Trader Vic – the creator? It’s no secret that Vic copied Don’s bar and restaurant style which we now know as Tiki so anything is possible, but one thing we know for sure is Trader Vic’s recipe has stood the test of time and it is his recipe that made the Mai Tai popular all around the world.

A fun fact! Awarded a Guinness World record in 2008, the Merchant Hotel in Belfast boasts having sold the most expensive cocktail. The hotel managed to source the very rare 17year old Wray & Nephew rum used in the original Trader Vic’s Mai Tai recipe and sold the decadent tipple for the princely sum of £750. It was a sell-out and according to the hotel, ‘Those lucky enough to sample this cocktail have confirmed that it was worth every penny.’

For this cocktail we’ve gone with a twist on the classic recipe. Unique and quite different however, everyone agrees it works and tastes great!

Ingredients

30ml No Name Spiced Mango Rum

20ml Spiced Gin 

20ml Mango juice

10ml Lime juice 

10ml Mango syrup

Chilli flakes

Spoonful of mango chutney

A poppadom

A slice of mango

 

Method

Shake all ingredients with ice and double strain into a champagne flute. Garnish with a slice of mango and a poppadom

 

Piña Colada

The iconic Piña Colada is the official drink of Puerto Rico, created in 1954 at the Caribe Hotel in San Juan by bartender Ramón “Monchito” Marrero. Piña Colada, meaning strained pineapple, is the most popular rum based cocktail. Who needs a sun-kissed beach to enjoy this delicious creamy cocktail?

Ingredients

60ml Coco Reàl

45ml white rum

60 ml pineapple juice

Method

Combine all ingredients in a blender carafe. Blend until smooth and pour into a hurricane glass. Garnish with a pineapple wedge and cherry.

 

Rum Old Fashioned

This very old cocktail dates back to the 1880’s and was originally made with bourbon or rye whiskey. The Rum Old Fashioned is a twist on this classic cocktail and some say it has more depth of flavour.

For this cocktail, we wanted to take a classic recipe and upcycle it into the modern day! Of course, we couldn’t just chuck some ice & sugar in, give it a stir, and call it a day. We worked with the Witch Kings to develop a ginger syrup as a replacement for sugar in the original Old Fashioned recipe. Therefore, taking ten minutes to make an Old Fashioned is not necessary for this build, as such a long stir-time is normally to ensure the sugar has fully dissolved. Though the ice must still dilute the spirit appropriately during construction, this is a straightforward and delicious recipe you can use to elevate almost any rum.

Ingredients
50ml Saint James Rhum VSOP or Trash & Treasure
12.5ml Ginger Syrup
Orange peel for garnish

Method

Add all ingredients into a mixing glass with ice and stir until well-chilled.

Strain into a chilled cocktail glass. Garnish with an orange twist.

*Optional: Add two dashes of bitters

July’s Surprise Box of Spiced Rum Featuring Lost Years Gold Spiced Rum

We are a small family business who knows the importance of supporting causes that we believe in and we actively seek out brands who work with amazing charities and care for our environment. We all have great childhood memories of family days out to the countryside and beach where we played for hours or seeing amazing animals that we’d only seen in books. The founders at Lost Years have teamed up with SEE Turtle, a charity running local community-based programs in the Global South to protect the endangered sea turtle species. Husband and wife, Lee and Trudy came up with the idea to team their love of rum with saving the sea turtles on a family holiday in Jamaica four years ago. In just one year, this small spirits brand with a big purpose saw their dream become a reality – sourcing incredible rums from some of the region’s most revered distilleries and partnering with US-based charity SEE Turtles to ensure every penny raised makes a difference. Their commitment to the environment doesn’t stop there, they also use 100% plastic packaging and a light-based bottle to help reduce carbon emissions.

While the lead flavour is clearly pineapple, this is much more than a pineapple flavoured rum!  The Lost Years team have created something genuinely multifaceted with waves of tropical fruits, including oranges, limes and coconut and exotic spices including cardamon, nutmeg and ginger.  Made with barrel aged rums and infused with juicy queen pineapples, it’s a flavour sensation!

Extremely versatile, it works well with simple mixer serves, in Tiki style cocktails and rum-based classics, or simply on its own over ice.

Having a craft or skill is a special thing to be cherished, without it we wouldn’t have works of art like the Mona Lisa, incredible engineered structures like the Clifton Suspension Bridge and beautiful places like Kew Gardens to while away sunny afternoons with family and friends. Rum is no exception, master distillers use science, artistry, knowledge, and their senses & passion to create a delicious rum and we are excited to share IslandSlice Single Dark Rum with you.

Meet Sylvester Herman, founder of IslandSlice, a fourth-generation rum distiller from St Lucia whose passion for his craft brought him to the shores of Scotland. Rum is his passion, and his family has been involved in its production for generations. Rum was pioneered by plantation workers, they found that it numbed the pain of whippings and helped see them through the constant heat of the blazing Caribbean sun. IslandSlice rum is produced from scratch using the ingredients, techniques and processes passed down from Sylvester’s ancestors. 

More recently Sylvester has joined forces with Dwight Jones, founder of RumTheShow.com, to create Island Brother Consulting. Dwight is a rum expert and a Rummelier® of the Royal Rum Society and he has been providing private rum tasting experiences, masterclasses and cocktail making experiences that you can enjoy in person at home or virtually. Together they will be producing rums that capture the essence of this playful spirit and pay homage to its rich heritage.

We learn so much from our parents, from right and wrong to developing the skills and ability to lead fulfilling lives. Our family values and rituals are at the heart of what we do and at Marshall & Brown they pay homage to two wonderful matriarchs, Eugenia Marshall & Olive Brown who passed on their appreciation of fine rum to Marvely Marshall and Carlton Brown. We are thrilled share Marshall & Brown Dark Rum with you this month.

Marvely & Carlton, the husband-and-wife duo behind the Marshall & Brown brand, travelled the world to discover some of the world’s finest rums. On their travels they gained a deeper understanding of the techniques, processes, sugars, molasses, fruits, and spices that go into making rum.  Their newfound knowledge and insight ignited a desire to create an exquisite range of artisan rums. They teamed up with Artisan distiller, Dominic M’Benga, who has taken their vision and expertly distilled their range of premium spiced rums.

Plantation OFTD rum is Plantation Rum’s take on that classic style of overproof rums. Alexandre Gabriel wanted to take overproof rum to a new level and go back to its roots in Tiki Cocktails. To join him on his quest to formulate a new overproof rum Alexandre visited rum joints around the world to bring together his dream team who came up with the perfect blend of several rums from three terroirs Guyana, Jamaica and Barbados rums. Each chosen for their characteristics.

TASTING NOTES 
Nose | Intense and very precise notes of coffee, orange, plum, jam and truffles.
Palate | It bursts with caramel cream, chocolate and vanilla notes. It continues on with cinnamon, raisins, nutmeg, oak and molasses with smoky accents.
Result | Long and lingering with dark chocolate, clove and caramel.
